  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1/2 tsp sweet paprika
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, basil, thyme, paprika, salt, and pepper.
  2. Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 24 hours for deeper flavor).
  3. Preheat grill to medium-high heat and lightly oil grates.
  4. Grill chicken for about 6-7 minutes per side until it reaches an internal temperature of 165°F (74°C). Let rest for 5 minutes before slicing.
