  • 1 (15 ounce) can chickpeas (rinsed and drained)
  • 2 mini cucumbers (chopped)
  • 1 tablespoon red onion (chopped)
  • 1 tablespoon fresh oregano (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1/2 red bell pepper (chopped)
  • 1 cup little tomatoes (halved)
  • 1/2 cup Kalamata olives
  • 3.5 ounces feta cheese (packed in oil & herbs if possible)
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1 clove garlic (minced)
  • Salt & pepper to taste

Instructions

  1. Start by rinsing and draining the chickpeas. Place them in a large bowl.
  2. Chop the cucumbers, red onion, red bell pepper, and tomatoes. Add to the bowl with the chickpeas.
  3. Chop the fresh oregano and parsley, then sprinkle over the vegetables.
  4. Combine olive oil, lemon juice, minced garlic, salt, and pepper in the salad bowl.
  5. Toss everything together until well mixed. Adjust seasoning if necessary.
