  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1/2 cup red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, peeled, seeded, and diced
  • 1/2 cup Kalamata olives, pitted and halved
  • 4 ounces feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Drain and rinse 2 cans of chickpeas; pat dry.
  2. Finely chop 1/2 cup red onion, halve 1 cup cherry tomatoes, peel and dice 1 cucumber, and halve 1/2 cup Kalamata olives.
  3. In a small bowl, whisk together 1/4 cup olive oil, 3 tablespoons lemon juice, minced garlic clove, dried oregano, salt, and pepper.
  4. In a large mixing bowl, combine chickpeas, vegetables, crumbled feta (4 ounces), chopped parsley (1/4 cup), and mint (1/4 cup). Pour dressing over the salad and gently toss.
  5. Serve immediately or chill for enhanced flavor.
