  • 1 can cannellini beans
  • 1 can kidney beans
  • 1/4 cup red onion, chopped fine
  • 3/4 cup celery, chopped
  • 1 small cucumber, peeled, seeded, and chopped
  • 3/4 cup fresh Italian parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 tomatoes, chopped fine
  • 1/4 cup extra-virgin olive oil
  • Juice of 11/2 lemons
  • 1 clove garlic, peeled and minced
  • 1/2 teaspoon dried Italian seasoning
  • Ground pepper and sea salt to taste

Instructions

  1. In a large bowl, combine the rinsed garbanzo beans, cannellini beans, kidney beans, red onion, celery, cucumber, parsley, basil, and tomatoes.
  2. In a small bowl or mason jar, whisk together the olive oil, lemon juice, minced garlic, and Italian seasoning until well blended.
  3. Drizzle the dressing over the salad mixture and toss gently to coat all ingredients evenly.
  4. Cover with plastic wrap or transfer to an airtight container and refrigerate for 45-60 minutes before serving to allow flavors to meld.
