Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 cup sliced mushrooms
  • 1/2 cup Marsala apple vinegar
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes on each side until golden brown; remove from skillet.
  2. In the same skillet, melt butter and sauté sliced mushrooms for about 4-5 minutes. Add minced garlic and thyme; cook for another minute.
  3. Deglaze with Marsala apple vinegar, scraping up browned bits from the pan. Let simmer for 2-3 minutes.
  4. Add chicken broth and bring to a gentle simmer. Stir in orzo pasta; cook for about 8-10 minutes until al dente.
  5. Lower heat, stir in heavy cream, and return chicken to the skillet to warm through. Adjust seasoning as needed.
  6. Garnish with fresh parsley before serving.
