  • 4 cloves garlic, grated
  • 2 cups light cream
  • 1 cup fresh grated Parmesan cheese (or nutritional yeast)
  • 1/2 cup sun-dried tomatoes + 1 tablespoon oil from the jar
  • 1 tablespoon finely chopped fresh basil
  • 2 teaspoons chicken bouillon powder (or vegetable bouillon)
  • 3/4 box thin linguini (or alternative)

Instructions

  1. In a large non-stick pan over medium heat, melt the butter. Add grated garlic and cook for about 1 minute until fragrant.
  2. Pour in light cream, stirring gently as it simmers for about five minutes.
  3. Whisk in grated Parmesan cheese, sun-dried tomato paste, chicken bouillon powder, salt, pepper, garlic powder, and chopped basil until well combined.
  4. Cook the linguini according to package instructions until al dente; reserve some pasta water before draining.
  5. Mix the cooked linguini into the sauce, adding reserved pasta water as needed to achieve desired consistency.
  6. Serve warm, garnished with additional Parmesan and basil if desired.
