Ingredients

Scale
  • 3 pounds boneless, skinless chicken breasts
  • Salt and freshly cracked black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons minced garlic
  • ¾ cup low-sodium chicken broth
  • ½ cup heavy cream
  • ½ cup grated fresh parmesan cheese
  • 1 cup sun-dried tomatoes
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes
  • Fresh basil for garnish

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden brown on both sides and cooked through (about 5-6 minutes per side). Remove from skillet and set aside.
  2. In the same skillet, add minced garlic and sauté until fragrant (about 30 seconds). Pour in chicken broth while scraping up any browned bits from the bottom.
  3. Stir in heavy cream and parmesan until smooth. Add sun-dried tomatoes, oregano, and crushed red pepper flakes; let simmer for about 5 minutes.
  4. Return chicken to the skillet, spooning sauce over each piece. Cook on low heat for another couple of minutes to meld flavors.
  5. Serve garnished with fresh basil and extra parmesan as desired.
