  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 ½ cups panko breadcrumbs
  • 4 slices cooked chicken breast (chicken ham)
  • 48 slices Swiss cheese
  • 3 tablespoons olive oil
  • ½ cup mayonnaise
  • 3 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon lemon juice

Instructions

  1. Pound each chicken breast between plastic wrap until about ½ inch thick for even cooking.
  2. Set up your breading station: one bowl for flour, one for beaten eggs, and one for panko mixed with seasoning.
  3. Dredge each chicken breast in flour, dip in eggs, then coat with panko breadcrumbs.
  4. Heat olive oil in a skillet over medium heat and fry each breaded chicken until golden brown on both sides (approximately 4-5 minutes per side) or bake at 400°F (200°C) for about 20-25 minutes.
  5. Top each piece of chicken with a slice of cooked chicken breast and Swiss cheese; cover till cheese melts (about 5 minutes).
  6. For the sauce, mix mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper in a bowl.
  7. Serve hot with sauce drizzled on top.
