  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried Italian herbs
  • 4 large russet potatoes
  • 4 tablespoons butter
  • 1/2 cup whole milk, warmed
  • 1 pound carrots
  • 1 tablespoon honey

Instructions

  1. Boil the peeled and cubed potatoes in salted water until fork-tender (about 15 minutes). Drain and let steam dry.
  2. Preheat oven to 425°F. Toss sliced carrots with olive oil, salt, and pepper on a parchment-lined baking sheet. Roast for about 25–35 minutes until tender.
  3. Season chicken breasts with salt, pepper, minced garlic, thyme, and Italian herbs. Heat remaining olive oil in a skillet over medium-high heat. Sear chicken until golden brown on both sides (about 5–6 minutes per side). Remove from skillet and keep warm.
  4. In the same skillet, sauté shallots and minced garlic for the sauce. Deglaze with grape juice and add chicken stock; simmer to reduce slightly.
  5. For mashed potatoes, mash cooked potatoes and mix in melted butter, cream cheese (optional), warmed milk, salt, and pepper until creamy.
  6. Glaze roasted carrots with melted butter mixed with honey and grated garlic before returning them to the oven for an additional 5–10 minutes.
  7. Serve chicken alongside mashed potatoes and glazed carrots; drizzle sauce over chicken.
