  • 8 to 10 ounces chocolate-covered toffee chunks (chopped)

  2. In a large bowl, cream together the cold butter, brown sugar, and regular sugar until light and fluffy (about 3-4 minutes).
  3. Add the eggs and mix until smooth.
  4. Gently fold in the cocoa powder, flour, baking soda, cornstarch, salt, and any optional espresso powder until just combined.
  5. Incorporate the chocolate-covered toffee chunks into the dough.
  6. Roll generous balls of dough (about 6 ounces each) and place them on a parchment-lined baking sheet.
  7. Bake for approximately 9-11 minutes until just set but soft in the center.
  8. Press extra toffee chunks on top when out of the oven; let cool for 10 minutes before transferring to a wire rack.
