  • 4 1/4 cups all-purpose flour
  • 1 cup buttermilk
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 Tbsp fresh lemon zest
  • 1/4 cup fresh lemon juice
  • 2 cups powdered sugar
  • 4 1/2 tsp instant dry yeast
  • 1 Tbsp + 1 tsp poppy seeds – optional
  • 1 tsp fine salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup packed light brown sugar
  • 2 Tbsp unsalted butter, softened

Instructions

  1. In a bowl, mix flour, yeast, poppy seeds (if using), and salt.
  2. In another bowl, whisk together buttermilk, granulated sugar, softened butter, eggs, and lemon zest until smooth.
  3. Gradually combine wet and dry ingredients using a stand mixer or by hand until you form a soft dough.
  4. Let the dough rise in a greased bowl until doubled in size (about 30 minutes).
  5. Roll out the dough into a rectangle and spread softened butter on top. Sprinkle sugars and lemon zest evenly over it.
  6. Roll up the dough tightly and slice into equal pieces using dental floss.
  7. Place slices into a greased pan lined with parchment paper and let rise for another 20 minutes.
  8. Bake at 350°F (175°C) for about 28 minutes until golden brown.
  9. Mix powdered sugar with lemon juice and melted butter for icing; drizzle over warm rolls.
