  • 14 Tbsp butter, softened
  • 3/4 cup sugar
  • 1 egg yolk
  • 2 Tbsp lemon juice
  • 1 Tbsp lemon zest
  • 1 1/2 cups all-purpose flour
  • 1/2 cup arrowroot powder (or cornstarch)
  • 24 Tbsp dried lavender flowers
  • Pinch of salt

Instructions

  1. Cream softened butter and sugar in a mixing bowl until light and fluffy.
  2. Mix in the egg yolk, lemon juice, and lemon zest until combined.
  3. Gradually add the flour, arrowroot powder (or cornstarch), dried lavender flowers, and salt, mixing until a dough forms.
  4. Shape the dough into a log, wrap tightly in parchment paper, and chill in the fridge for 30 minutes.
  5. Preheat your oven to 300°F (150°C). Slice the chilled log into 1/4-inch rounds and place on a parchment-lined baking sheet.
  6. Bake for 25-30 minutes until golden around the edges but still soft in the center.
  7. Allow cooling on the baking sheet before transferring to a rack.
