  • 1 Tbsp olive oil
  • 2 large eggs
  • 1 garlic clove (minced)
  • ½ tsp Italian seasoning
  • 1 cup Parmesan cheese (grated)
  • 8 Tbsp unsalted butter
  • ¼ cup lemon juice
  • ¼ cup chicken broth
  • 1 Tbsp parsley (to garnish, optional)
  • ½ lemon (sliced for garnish, optional)

Instructions

  1. Cut chicken breasts in half lengthwise and pound to even thickness.
  2. In one bowl, whisk eggs, garlic, Italian seasoning, salt, and pepper. In another bowl, combine Parmesan and flour.
  3. Dip chicken into the egg mixture, then dredge in the Parmesan mixture.
  4. Heat olive oil in a skillet over medium heat. Cook chicken for about 4-5 minutes per side until golden brown.
  5. In a separate saucepan, melt butter and sauté minced garlic. Add chicken broth, lemon juice, and pepper; simmer for two minutes.
  6. Pour sauce over cooked chicken and garnish with parsley and lemon slices if desired.
