  • 1 tablespoon minced garlic
  • ½ teaspoon black pepper
  • ½ teaspoon dried parsley
  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • 2 bay leaves
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced carrots, onion, and celery, sautéing until softened (5-7 minutes).
  2. Stir in minced garlic, black pepper, parsley, thyme, and salt; cook for an additional minute.
  3. Add boneless chicken breasts and low-sodium chicken broth along with bay leaves. Bring to a simmer until chicken is cooked through (about 20 minutes).
  4. Remove chicken, shred it into bite-sized pieces, and return to the pot with dry orzo pasta. Cook according to package instructions until al dente.
  5. Just before serving, stir in fresh lemon juice for added brightness.
