  • 2 sticks celery (chopped finely)
  • 2 medium carrots (peeled & chopped finely)
  • 1/2 medium onion (chopped)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 2 tablespoons flour
  • 6 cups chicken broth
  • 1.5 pounds uncooked chicken breasts
  • 1 cup uncooked orzo
  • 1 tablespoon lemon juice (or to taste)
  • Salt & pepper (to taste)

Instructions

  1. Heat butter and olive oil in a large pot over medium-high heat. Add celery, carrots, and onion; sauté for about 5-7 minutes until softened.
  2. Stir in minced garlic for 30 seconds, then add flour and mix well for another minute.
  3. Pour in chicken broth and stir until the flour dissolves. Add the chicken breasts and Italian seasoning; bring to a boil.
  4. Once boiling, reduce heat and simmer covered with lid slightly ajar for about 15 minutes.
  5. Add uncooked orzo to the pot; cook for an additional 10 minutes until tender.
  6. Remove cooked chicken, chop into bite-sized pieces, return to soup. Stir in lemon juice and season with salt and pepper.
