  • ½ cup unsalted butter (room temperature)
  • 4 eggs (room temperature)
  • ¼ cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing them and lining the bottoms with parchment paper.
  2. In a medium bowl, whisk together the flour, cornstarch, baking powder, and salt.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition.
  4. Incorporate the vanilla extract, lemon zest, milk, and lemon juice into the mixture.
  5. Gradually add the dry ingredients until just combined. Gently fold in the blueberries tossed in flour.
  6. Pour batter evenly into prepared pans and bake for about 25-30 minutes or until a toothpick comes out clean.
  7. For the cheesecake layer: Beat cream cheese with sugar until smooth, then mix in eggs, sour cream, and heavy cream until fully blended.
  8. Pour over one cooled cake layer before adding the second layer on top; bake for an additional hour or until set.
  9. Allow cooling completely before frosting with lemon cream cheese frosting made from softened cream cheese, butter, powdered sugar, salt, vanilla extract, and lemon zest.
