  • 4 salmon fillets (5 oz each), skin removed
  • 1 ½ cups ricotta cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh basil, finely chopped
  • 2 teaspoons lemon zest
  • ½ pound asparagus, trimmed
  • 1 tablespoon butter
  • ½ cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons cornstarch mixed with 2 teaspoons water

Instructions

  1. Preheat your oven to 425°F. Season salmon fillets with salt and pepper.
  2. In a bowl, mix ricotta cheese, Parmesan cheese, basil, lemon zest, salt, and pepper until combined.
  3. Spread the ricotta mixture over each salmon fillet and place asparagus in the center before rolling tightly.
