  • 5 cups de-stemmed and chopped kale
  • 1/4 cup grated parmesan cheese (or dairy-free alternative)
  • 1 (15-ounce) can chickpeas
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • Juice of 1 tablespoon lemon
  • 1 clove garlic, minced

Instructions

  1. Boil the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. Preheat the oven to 400°F (200°C). Rinse and dry chickpeas, then toss with olive oil, paprika, and salt before spreading on a baking sheet. Roast for about 30 minutes until crispy.
  3. In a bowl, massage the chopped kale with a pinch of salt for about 2-3 minutes until tender.
  4. In another bowl, whisk together mayonnaise, Greek yogurt, parmesan cheese, lemon juice, minced garlic, Dijon mustard, salt, and pepper.
  5. In a large mixing bowl, combine cooked pasta, massaged kale, roasted chickpeas, and dressing; toss gently to coat.
