- 1/4 cup mayonnaise
- 2 tbsp Jamaican jerk seasoning
- 1/2 red onion, finely chopped
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Boil the potatoes in salted water until fork-tender, about 12-15 minutes. Drain and let cool.
- In a bowl, mix the mayonnaise and Jamaican jerk seasoning; let sit while potatoes cool.
- Once cooled, add potatoes, red onion, and parsley to the mayo mixture; gently toss until coated.
