  • 1 1/2 cups granulated sugar
  • 3/4 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup strong brewed coffee, cooled
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup caramel sauce
  • 1 1/2 cups unsalted butter (for buttercream), softened
  • 3 cups powdered sugar
  • 2 tbsp strong brewed coffee (for buttercream), cooled
  • 1 tsp vanilla extract (for buttercream)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, cream together the softened unsalted butter and granulated sugar using an electric mixer until light and fluffy, about 3–5 minutes.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, combine flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture, alternating with cooled coffee until fully incorporated without overmixing.
  5. Pour batter evenly into the prepared pans and bake for 25–30 minutes or until a toothpick inserted comes out clean.
  6. Allow cakes to cool in the pans for 10–15 minutes before transferring to wire racks to cool completely.
  7. For the buttercream: Beat softened unsalted butter until creamy. Gradually sift in powdered sugar while mixing on low speed until combined. Add cooled coffee and vanilla extract; mix until smooth.
  8. Assemble by placing one cake layer on a serving platter, spreading with half of the caramel sauce and half of the buttercream. Top with the second layer and repeat the process.
  9. Chill for at least one hour before serving.
