  • 1 large onion (about 2 cups), peeled and diced
  • ½ pound chopped cabbage
  • 4 medium starchy potatoes (about 1 ½ pounds), peeled and chopped
  • 5 cups vegetable stock
  • 1½ cups whole milk or half-and-half
  • ¼ teaspoon black pepper
  • Salt to taste

Instructions

  1. In a large pot over medium heat, melt the salted butter. Add the diced onions and sauté until translucent (about 4–5 minutes).
  2. Stir in the chopped cabbage and cook until wilted (around 5 minutes).
  3. Add the chopped potatoes and pour in the vegetable stock. Bring to a gentle simmer and reduce heat. Let cook uncovered for about 20 minutes until potatoes are tender.
  4. Using an immersion blender or food processor, blend the soup until thick yet chunky.
  5. Return to low heat, stir in the milk or half-and-half, and season with salt and black pepper to taste. Simmer for another 5 minutes before serving.
