  • 3 large russet potatoes
  • 3 large Yukon Gold potatoes
  • 7 tablespoons unsalted butter
  • ½ cup heavy cream or whole milk (or plant-based milk)
  • 1 medium onion, chopped
  • ½ head green cabbage, chopped
  • Kosher salt and fresh ground black pepper to taste

Instructions

  1. Boil the russet and Yukon Gold potatoes in a large saucepan with lightly salted water until fork-tender (about 15-20 minutes). Drain well.
  2. In a skillet, melt 2 tablespoons of butter over medium heat. Sauté the chopped onion until translucent, then add the cabbage and cook until tender (around 7-8 minutes).
  3. Return drained potatoes to the saucepan. Add remaining butter and heavy cream (or milk). Mash until smooth and creamy.
  4. Fold in the sautéed onion and cabbage mixture, seasoning generously with salt and pepper.
  5. Serve warm with pats of butter on top for extra richness.
