Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons baking powder
  • 1 cup grated russet potatoes (washed and peeled)
  • 1 cup mashed potatoes
  • 1 large egg (lightly beaten)
  • 2 tablespoons heavy cream
  • Butter for frying

Instructions

  1. In a large bowl, whisk together the flour, salt, black pepper, and baking powder until well combined.
  2. In another bowl, gently fold the grated russet potatoes, mashed potatoes, beaten egg, and heavy cream together until mixed.
  3. Gradually add the dry ingredients to the potato mixture, folding until just incorporated; avoid overmixing.
  4. Heat butter in a skillet over medium-high heat until bubbling. Scoop mounds of batter into the pan and flatten slightly to form cakes.

  6. Transfer cooked boxty to a paper towel-lined plate to absorb excess grease.
