  • 1 Tbsp cooking oil (avocado or grapeseed)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp chili powder
  • 3/4 cup black beans (drained and rinsed)
  • 3/4 cup shredded cheddar or Mexican-blend cheese
  • 1/2 cup salsa
  • 1/2 avocado (diced)
  • 1/4 cup sour cream or plain Greek yogurt

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash sweet potatoes and slice them into rounds about 1/8 inch thick. Toss with oil, garlic powder, salt, and chili powder.
  3. Arrange the slices in a single layer on a parchment-lined baking sheet and bake for about 20 minutes, flipping halfway through until golden brown.
  4. Once baked, top with black beans and cheese, then return to the oven for an additional 3 to 5 minutes until cheese is melted.
  5. Broil for an additional minute to achieve crispiness if desired.
