  • 1/3 cup melted butter
  • 3 packages (8 oz each) cream cheese, softened
  • 3/4 cup packed brown sugar
  • 4 eggs, lightly beaten
  • 2 cups sour cream (gluten-free if needed)
  • 2 1/4 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 3/4 teaspoon allspice
  • 1/2 teaspoon salt
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. For the crust, mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom and slightly up the sides of the pan.
  3. In a large bowl, beat cream cheese and sugars until smooth. Add eggs one at a time, mixing on low speed. Stir in sour cream, vanilla extract, cinnamon, allspice, and salt until fully combined.
  4. Pour the filling into the prepared crust. Bake for 55-65 minutes until nearly set but slightly jiggly in the center.
  5. Cool on a wire rack for about 10 minutes before refrigerating overnight.
