  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a medium bowl, whisk together honey, olive oil, apple cider vinegar, minced garlic, oregano, red pepper flakes, salt, and pepper.
  2. Place chicken breasts in a resealable bag or shallow dish; pour marinade over them. Seal and refrigerate for at least 30 minutes (up to 4 hours).
  3. Preheat oven to 400°F (200°C). Remove chicken from marinade (discard marinade) and place in a baking dish.
  4. Top each chicken breast with crumbled feta cheese.
  5. Bake for 25 to 30 minutes or until chicken reaches an internal temperature of 165°F (75°C). Optionally broil for an additional 2–3 minutes for more color.
  6. Let rest for about five minutes before serving with lemon wedges and garnished with parsley.
