  • 2 heads frisee, chopped
  • 4 cups wild arugula
  • 1 cup candied walnuts
  • 2 large Honeycrisp apples, sliced into matchsticks
  • 1/4 cup plus 2 tablespoons apple cider vinegar
  • 2 1/2 tablespoons honey
  • 2 tablespoons walnuts, lightly chopped
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon plus a pinch salt
  • Pinch cumin
  • Pinch curry powder
  • 1/2 cup plus 2 tablespoons olive or avocado oil

Instructions

  1. Prepare the dressing by blending apple cider vinegar, honey, chopped walnuts, cinnamon, black pepper, salt, cumin, and curry powder in a food processor until smooth. Slowly drizzle in olive oil while blending until emulsified.
  2. In a large bowl, combine frisee and arugula with half of the sliced apples. Drizzle with some dressing and toss to coat.
  3. Serve the salad on plates or a platter topped with remaining apple slices and more vinaigrette. Garnish with additional candied walnuts if desired.
