  • 500g Carrots
  • 300g Greek Yogurt
  • 150g Feta Cheese
  • 240g Cooked Chickpeas
  • 2 tbsp Honey
  • 2 tbsp Rose Harissa Paste
  • Olive Oil
  • 1 Lemon (juice only)
  • 0.5 tsp Cinnamon
  • Salt
  • Black Pepper

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Trim the carrot tops and place carrots in a roasting tray. Drizzle with olive oil, sprinkle with cinnamon, salt, and pepper; toss to coat.
  3. Roast the carrots for 30 minutes until tender and caramelized.
  4. While roasting, mix chopped carrot tops with lemon juice and olive oil in a bowl until chunky.
  5. In another bowl, whisk together Greek yogurt and crumbled feta until creamy and fluffy; season to taste.
  6. Add drained chickpeas to the tray with carrots after 30 minutes; roast for an additional 15 minutes until crispy.
  7. Combine honey and harissa paste in a small bowl and mix well.
  8. Once out of the oven, toss the roasted carrots and chickpeas with the honey-harissa mixture.
  9. Serve by spooning whipped feta onto plates topped with roasted veggies.
