  • 2 tsp sugar
  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil, divided
  • 1 jar raspberry preserves
  • 2 cups confectioners' sugar
  • 24 tbsp whole milk (for glaze)

Instructions

  1. Activate the yeast by mixing warm water and sugar in a bowl. Sprinkle yeast on top and let sit for 5-10 minutes until frothy.
  2. In a large bowl, whisk together flours and salt. Make a well in the center and add the yeast mixture and 4 tbsp olive oil. Mix until sticky dough forms.
  3. Knead on a floured surface for about 8-10 minutes until smooth. Place in a greased bowl, cover, and let it rise until doubled (about an hour).
  4. Once risen, punch down the dough and shape it on a greased baking sheet. Create wells for raspberry preserves.
  5. Preheat oven to 375°F (190°C). Drizzle remaining olive oil over focaccia and bake for approximately 18 minutes until golden brown.
  6. For glaze, mix confectioners' sugar with milk until smooth; drizzle over slightly cooled focaccia.
