  • 5 tbsp olive oil
  • 2 tbsp fresh basil
  • 2 tbsp fresh parsley
  • 1 tsp dry thyme
  • 3 cloves garlic
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 red onion
  • 1 red bell pepper
  • 5 cloves garlic
  • Salt and pepper
  • ¼ tsp dry oregano
  • ¼ tsp dry thyme
  • 700 grams crushed tomatoes
  • 2 small eggplants
  • 2 zucchini
  • 6 tomatoes
  • 2 red onions
  • 1 yellow bell pepper

Instructions

  1. Preheat oven to 200°C (390°F).
  2. Slice vegetables evenly and set aside.
  3. In a bowl, combine olive oil, chopped herbs, minced garlic, salt, and pepper to create the herb dressing.
  4. In a large oven-proof skillet, heat olive oil over medium heat; sauté red onion and bell pepper until soft. Add garlic and cook until fragrant.
  5. Stir in crushed tomatoes and seasoning; simmer for 10 minutes.
  6. Layer sliced vegetables on top of the sauce in an alternating pattern. Drizzle herb dressing over the arranged veggies.
  7. Cover with foil and bake for 40 minutes; uncover and bake for an additional 20 minutes until softened.
