  • ¾ cup water
  • ½ cup whole milk
  • ¼ cup granulated sugar
  • 2½ teaspoons instant yeast
  • 4 cups bread flour
  • 1 teaspoon fine sea salt
  • 4 tablespoons unsalted European-style butter, cubed and softened
  • 20 tablespoons unsalted European-style butter, softened, cubed
  • ¼ cup all-purpose flour
  • 1 egg yolk
  • 1 tablespoon heavy cream
  • 24 chocolate batons (or bittersweet baking bars)

Instructions

  1. In a bowl, mix warm water and milk; add sugar and instant yeast. Let it sit until frothy.
  2. Stir in bread flour and salt until combined. Knead on a floured surface for about 5 minutes.
  3. Chill the dough covered for about an hour.
  4. Roll out the dough into a rectangle, place softened butter on one half, fold over, and encase it.
  5. Roll again into a rectangle, fold in thirds, wrap, and chill for more layering (repeat twice).
  6. Cut triangles from the rolled dough, place chocolate batons at the wide end, and roll up tightly.
  7. Let rise until doubled in size on lined baking sheets.
  8. Bake at 375°F for about 24 minutes until golden brown.
