  • 1 pound lean ground turkey
  • 1 tablespoon olive oil
  • 2 cloves garlic, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 1 cup diced canned tomatoes (with their juice)
  • 1 medium zucchini, grated
  • A large handful of spinach, chopped
  • 1 cup black beans, rinsed and drained (optional)
  • 1 cup corn kernels, usually frozen (optional)
  • 1 cup cheddar cheese, grated
  • 2 green onions, finely sliced
  • Salsa
  • Plain Greek yogurt

Instructions

  1. Preheat the oven to 400°F (200°C). Wash sweet potatoes, poke holes with a fork, and bake on a lined sheet for about 45 minutes until tender.
  2. In a skillet, heat olive oil, sauté garlic, then add ground turkey with spices; cook until browned.
  3. Stir in diced tomatoes, zucchini, spinach, black beans, and corn; simmer for 5 minutes.
  4. Slice baked sweet potatoes open and fluff insides. Stuff with turkey filling and top with cheese.
  5. Return to the oven for an additional 10 minutes until cheese is melted. Serve with salsa and Greek yogurt.
