  • 4 tablespoons unsalted butter (or 3 tablespoons olive oil + 1 tablespoon butter)
  • 1 large yellow onion, finely chopped
  • 56 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk (or half-and-half)
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese, shredded
  • Fresh herbs (parsley, chives, thyme)
  • Salt and pepper to taste

Instructions

  1. Peel and cube the Yukon Gold potatoes. Rinse under cold water.
  2. In a large pot over medium heat, melt butter or heat olive oil and butter. Sauté chopped onions until soft (about 5 minutes), then add minced garlic for another minute.
  3. Sprinkle flour over the aromatics; stir continuously for about 2 minutes to form a roux.
  4. Gradually whisk in broth until smooth; bring to a gentle simmer.
  5. Add potato cubes; cover pot and cook for 15-20 minutes until tender.
  6. Blend half of the soup for creaminess; return to pot.
