  • 1/4 cup/27g coconut flour
  • 2 eggs
  • 1/2 cup/125g pumpkin puree
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 tablespoon melted coconut butter
  • 1 tablespoon dairy-free milk

Instructions

  1. Preheat your oven to 160C (350F) and grease a mini muffin tray.
  2. In a bowl, whisk together eggs, pumpkin puree, honey (or maple syrup), and vanilla until smooth.
  3. Add coconut flour, pumpkin spice, cinnamon, and baking powder to the wet mixture; stir until combined.
  4. Fill each muffin hole about 3/4 full with batter and bake for approximately 15 minutes until golden.
  5. For the glaze, mix melted coconut butter with maple syrup and dairy-free milk until smooth.
  6. Once cooled slightly, dip donut holes into the glaze and enjoy!
