  • ¾ cup whole wheat flour or gluten-free flour
  • 1 ½ tsp baking powder
  • 1 tsp ground ginger
  • ¼ tsp ground cinnamon
  • ⅛ tsp ground nutmeg
  • ⅛ tsp ground cloves
  • ¼ tsp salt
  • 1 ½ tbsp melted unsalted butter or coconut oil
  • 1 large egg white
  • 1 tsp vanilla extract
  • ¼ cup molasses
  • 5 tbsp nonfat milk

Instructions

  1. In a medium bowl, whisk together oats, flour, baking powder, ginger, cinnamon, nutmeg, cloves, and salt.
  2. In another bowl, mix melted butter (or coconut oil), egg white, and vanilla until smooth. Stir in molasses and milk.
  3. Combine dry ingredients into wet ingredients until just mixed; chill dough for 30 minutes.
  4. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  5. Scoop rounded dough onto the sheet and gently flatten each scoop. Bake for 7-10 minutes until golden around the edges.
