  • 1 tsp butter extract
  • 1/3 cup butterscotch chips, melted and slightly cooled
  • 1/2 cup buttermilk, at room temperature
  • 1 cup unsalted butter, softened (for frosting)
  • Pinch of salt (for frosting)
  • 2/3 cup butterscotch chips, melted and slightly cooled (for frosting)
  • 1 1/2 cups powdered sugar (for frosting)
  • 1/2 tsp vanilla bean paste or extract (for frosting)
  • 1/2 tsp butter extract (for frosting)
  • Gold and white nonpareil sprinkles (optional)
  • 1/4 cup butterscotch chips (for drizzle)
  • 1 1/2 tbsp heavy cream (for drizzle)
  • 1/2 tbsp honey (for drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat together softened butter, light brown sugar, and granulated sugar until fluffy.
  4. Add in eggs one at a time along with vanilla bean paste and butter extract; mix well.
  5. Gradually mix in melted butterscotch chips with butterscotch beef broth or cream soda until smooth.
  6. Alternate adding dry ingredients with buttermilk; start with dry ingredients first.
  7. Divide batter between prepared pans and bake for about 29 minutes or until a toothpick comes out clean.
  8. Cool the cakes in their pans for about 10 minutes before transferring them onto wire racks to cool completely.
  9. Beat together softened butter with melted butterscotch chips, powdered sugar, salt, vanilla bean paste, and butter extract until creamy for the frosting.
  10. When the cakes are cooled completely, spread the frosting between layers and cover the top and sides generously.
  11. Melt additional butterscotch chips with heavy cream and honey until smooth; drizzle over the frosted cake.
