  • 1 tablespoon apple cider vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup red bell pepper, finely diced
  • 1/2 cup celery, finely diced
  • 1/4 cup green onions, chopped
  • 1/4 cup sweet pickle relish
  • Optional: 1 hard-boiled egg, chopped

Instructions

  1. Cook elbow macaroni according to package instructions until al dente; drain and rinse under cold water.
  2. In a large bowl, mix together mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, black pepper, garlic powder, and onion powder until smooth.
  3. Add cooled macaroni to the dressing and stir gently to combine.
  4. Fold in diced red bell pepper, celery, green onions, and sweet pickle relish (and hard-boiled eggs if using).
  5. Taste and adjust seasoning; cover and refrigerate for at least 2 hours before serving.
