  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • â…” cup stout beef broth
  • 1½ cups 2% milk
  • ½ cup half-and-half
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon Dijon mustard
  • 2 ounces cream cheese
  • 3½ cups shredded Irish cheddar cheese (divided)
  • 1½ tablespoons butter (for topping)
  • 2 teaspoons finely minced garlic
  • ½ cup panko breadcrumbs
  • Fresh parsley for garnish

Instructions

  1. Cook elbow macaroni in salted boiling water until al dente; drain and set aside.
  2. In the same pot, melt butter over medium heat. Whisk in flour to create a roux; cook until golden.
  3. Gradually add stout beef broth, stirring constantly until thickened. Then add milk and half-and-half; mix well.
  4. Stir in salt, pepper, Dijon mustard, cream cheese, and shredded cheddar (reserve some for topping) until melted and smooth.
  5. Fold cooked macaroni into the cheese sauce until evenly coated.
  6. In a skillet, melt remaining butter and sauté garlic; mix with panko breadcrumbs until golden.
  7. Transfer mac and cheese to a greased baking dish, top with breadcrumb mixture and reserved cheddar.
  8. Bake at 350°F (175°C) for 25–30 minutes until bubbly and golden brown.
