  • 2 teaspoons instant dry yeast
  • 2 cups warm water (105°F – 115°F)
  • 1 tablespoon granulated sugar
  • 1/2 cup plus 2 tablespoons extra virgin olive oil
  • 4 teaspoons fine sea salt
  • 7 ounces gruyère cheese (cubed)
  • 2 tablespoons fresh thyme leaves
  • Maldon sea salt flakes for topping

Instructions

  1. In a large bowl, mix warm water and sugar; sprinkle yeast on top and let it froth for about five minutes.
  2. Stir in flour and fine sea salt until well combined.
  3. Knead the dough on a floured surface for about ten minutes until smooth and elastic.
  4. Place in an oiled bowl, cover with a damp cloth, and let rise until doubled in size (about one hour).
  5. Deflate the dough on a greased sheet pan and stretch it out evenly; create dimples using your fingers.
  6. Drizzle with olive oil, scatter gruyère cubes, thyme leaves, and sprinkle Maldon sea salt.
  7. Preheat oven to 425°F (220°C) and bake for about 50 minutes until golden brown.
