  • 2 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese

  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

  2. In a large skillet over medium heat, add olive oil and sauté chopped onions for about two minutes. Add minced garlic and cook until fragrant.
  3. Add ground turkey to the skillet, breaking apart clumps as it cooks until browned.
  4. Stir in drained diced tomatoes and Italian herbs; let simmer for an additional three minutes.
  5. Layer half of the zucchini slices in the baking dish. Spoon half of the turkey mixture over the zucchini, followed by half of the mozzarella cheese.
  6. Repeat layering with remaining zucchini, turkey mixture, and top with the rest of the mozzarella cheese.
  7. Bake for 30-35 minutes until golden brown and bubbly. Allow to rest for five minutes before serving.
