  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper (optional)
  • 1 cup frozen corn, thawed
  • ½ cup red onion, diced
  • ¼ cup cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp cilantro, chopped
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 avocado (sliced or mashed)
  • Sesame seeds & green onions (for garnish)

Instructions

  1. 1. Marinate shrimp: In a bowl, combine shrimp with olive oil, paprika, garlic powder, salt, and pepper. Let sit for at least 15 minutes.
  2. 2. Prepare corn salsa: Mix thawed corn, red onion, cilantro, lime juice, jalapeño (if using), and salt in another bowl; set aside.
  3. 3. Grill shrimp: Preheat grill over medium-high heat. Grill marinated shrimp for about 2-3 minutes on each side until pink and opaque.
  4. 4. Make creamy garlic sauce: Whisk together mayonnaise, sour cream, lime juice, minced garlic, cilantro, salt, and pepper until smooth.
  5. 5. Assemble bowls: Layer corn salsa at the bottom of each bowl. Top with grilled shrimp and sliced or mashed avocado. Drizzle with creamy garlic sauce.
  6. 6. Garnish with sesame seeds and green onions if desired.
