  • 4 lobster tails (68 ounces each)
  • 1/2 cup unsalted butter
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your grill to medium-high heat (350°F to 400°F).
  2. Cut the top shell of each lobster tail down the center with kitchen scissors, stopping just before the tail. Gently pull apart the shell.
  3. In a small bowl, melt butter and mix in minced garlic, parsley, lemon juice, paprika, salt, and pepper.
  4. Brush the exposed lobster meat generously with the garlic butter mixture.
  5. Grill the lobster tails shell side down for about 5 minutes until they begin to turn opaque.
  6. Flip them over and baste with reserved garlic butter; grill for another 5 minutes.
  7. Once cooked through (opaque meat), remove from grill and let rest for a few minutes before serving.
