  • 34 boneless skinless chicken breasts (about 1 1/2 lbs)
  • 8 cups chopped romaine or kale
  • 3/4 cup cherry tomatoes (halved)
  • 1 medium cucumber (peeled and sliced)
  • 1 large avocado (thinly sliced)
  • 6 hard-boiled eggs (sliced)
  • 3 Tbsp raw honey (melted if solid)
  • 1/4 cup dijon mustard
  • 2 Tbsp fresh lemon juice or white vinegar
  • 1/4 cup avocado oil
  • 1/4 tsp sea salt
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp avocado oil (for grilling)

Instructions

  1. Season chicken breasts with sea salt, black pepper, garlic powder, and onion powder. Let them marinate while preparing the grill.
  2. In a small bowl, whisk together melted raw honey, dijon mustard, lemon juice (or vinegar), avocado oil, and sea salt for the dressing.
  3. Grill the marinated chicken on medium-high heat for about 6-7 minutes per side until cooked through (internal temperature of 165°F). Once done, slice into strips.
  4. Chop greens and other vegetables: romaine lettuce, cherry tomatoes, cucumber, and avocado.
  5. In a large bowl or platter, layer the greens first and top with chicken slices and hard-boiled eggs.
  6. Drizzle with the honey Dijon dressing and toss gently to combine.
