  • 2 boneless, skinless chicken breasts (about 1 lb), thinly sliced
  • 4 slices provolone cheese
  • 4 slices mozzarella cheese
  • 4 sourdough or ciabatta rolls
  • 3 Tbsp balsamic vinegar
  • 2 Tbsp extra-virgin olive oil
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper, to taste
  • Fresh basil and thyme for garnish

Instructions

  1. In a shallow bowl, whisk balsamic vinegar, olive oil, Dijon mustard, honey (if using), minced garlic, salt, and pepper.
  2. Marinate the chicken in the mixture for 10–12 minutes.
  3. Grill the cut sides of the rolls in a preheated grill pan until golden brown.
  4. Cook marinated chicken in the same pan until fully cooked and caramelized.
  5. Assemble sandwiches with cheese and glazed chicken on toasted rolls; top with herbs.
  6. Grill assembled sandwiches until cheese melts completely.
