  • 2 pounds green beans
  • 1/3 cup freshly squeezed lemon juice
  • 2 cloves garlic
  • 1/3 cup extra virgin olive oil
  • 1 tsp dried oregano
  • Salt and pepper (to taste)
  • 14 oz grape or cherry tomatoes
  • 1/2 cup chopped fresh basil leaves
  • 1/4 cup chopped fresh Italian parsley leaves
  • 1/2 cup feta cheese (cubed)

Instructions

  1. Parboil the green beans in boiling water for 3 minutes. Immediately transfer them to an ice bath to stop cooking.
  2. In a small bowl, whisk together lemon juice, minced garlic, olive oil, oregano, salt, and pepper to create a dressing.
  3. In a large bowl, combine halved tomatoes with chopped basil and parsley.
  4. Once cooled, pat the green beans dry and add them to the bowl with the tomatoes and herbs.
  5. Gently toss everything together and finish by adding cubed feta.
