  • 2 lbs (1 kg) potatoes, peeled and cubed
  • 1 red bell pepper, cubed
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • Juice of ¼ lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • ¼ teaspoon cinnamon
  • ½ teaspoon ground black pepper
  • 2 oz (60 g) feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, toss together potatoes, red bell pepper, salt, olive oil, and lemon juice until well-coated.
  3. Spread the mixture evenly on a greased baking tray.
  4. Roast for about 25 minutes. Then remove from the oven and sprinkle with garlic powder, onion powder, paprika, oregano, cinnamon, and black pepper; toss gently.
  5. Return to the oven for an additional 10–15 minutes until golden brown and crispy.
  6. Drizzle with more lemon juice and top with crumbled feta and parsley before serving.
