  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup fresh parsley (finely chopped)
  • 1 medium red onion (finely chopped)
  • 1/4 cup feta cheese (crumbled)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the Yukon Gold potatoes thoroughly and cut them into uniform sticks about 1/3-inch wide.
  3. Soak the cut potatoes in cold water for 10-15 minutes to remove excess starch. Drain and pat dry.
  4. In a large bowl, toss the potatoes with olive oil, salt, oregano, dill, black pepper, and garlic powder until evenly coated.
  5. Line a baking sheet with parchment paper and spread the fries in a single layer.
