  • 1/4 cup grated Parmesan cheese (or nutritional yeast)
  • 2 cloves garlic, minced
  • 1 egg (or flaxseed egg)
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh oregano
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, mix ground chicken, breadcrumbs, Parmesan cheese (or nutritional yeast), garlic, egg (or flaxseed egg), parsley, oregano, salt, and pepper until combined.
  2. Shape the mixture into one-inch meatballs. Heat olive oil in a skillet over medium heat and cook the meatballs until browned on all sides.
  3. Meanwhile, bring vegetable broth to a boil in another pot. Add orzo and cook according to package instructions.
  4. Once cooked, drain excess liquid from the orzo and stir in lemon zest, lemon juice, olive oil, salt, and pepper. Fold in the meatballs gently.
  5. Serve warm with additional parsley as garnish.
