  • 1/8 tsp ground cloves
  • 2 1/2 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground ginger
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 2 egg yolks, at room temperature
  • 1 tsp vanilla
  • 1/3 cup unsulphured molasses

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese, granulated sugar, and vanilla until smooth.
  2. For the gingerbread dough, cream together softened butter and brown sugar until fluffy. Mix in egg yolks and molasses.
  3. In a separate bowl, combine flour, spices, salt, and baking soda; then gradually add this mixture to the wet ingredients.
  4. Scoop out dough, place cheesecake filling in the center, and wrap dough around it to seal.
  5. Bake on a lined baking sheet at 350°F (175°C) for about 11 minutes until just set.
