  • 2.53 kg / 5-6 lb turkey breast (skin on, bone-in)
  • 1/2 tsp salt
  • Black pepper to taste
  • 1 brown onion (halved)
  • 1 head of garlic (halved)
  • 150 g / 10 tbsp unsalted butter (softened)
  • 4 large garlic cloves (minced)
  • Fresh herbs: sage, rosemary, thyme, parsley

Instructions

  1. Prepare the garlic herb butter by mixing softened butter with minced garlic, chopped herbs, salt, and pepper.
  2. Pat the turkey breast dry and loosen the skin using a knife.
  3. Slather two-thirds of the garlic herb butter under the skin and spread the rest on top.
  4. Season with salt and pepper; let sit in the fridge overnight if possible to enhance flavor.
  5. Place halved onion and garlic in the slow cooker; add the turkey breast on top.
  6. Cover and cook on low for about 6 hours or until internal temperature reaches 75°C/165°F.
  7. Once cooked, let the turkey rest for about 20 minutes before broiling for crispy skin.
  8. Carve and serve with gravy or cranberry sauce.
